One night this past summer, my friends and I went out to Bella Gelateria in Yaletown. We got some drinks and all ordered the same one. It sounded good on the menu and we’d never tried it before. It was the Hugo. It was love at first sip. The combination of St. Germain, prosecco and soda was divine and we were all hooked. Since then, we make the drink when we get together and pretty much can’t get enough. I even whipped a few together the night I asked that same group of friends to be my bridesmaids (more on that another time).
If you’re not a fan of prosecco because it’s too dry, not to worry because the St. Germain is sweet and it balances the flavours right out. Bella Gelateria uses club soda in their Hugo, but I omit that ingredient. Why dilute such goodness?
Start by adding a few ice cubes to your glass. I’ve seen the Hugo done in wine glasses, but I used the old fashioned glasses pictured. Then add 1 part St. Germain and 2 parts Prosecco to the glass. You can adjust these proportions to taste too. Stir with a spoon. Garnish with fresh mint leaves. It’s that easy!
